Salmon with crunchy potatoes is a brilliantly simple dinner dish. Fresh salmon is always a healthy choice due to its high omega-3 content that help prevents heart disease and diabetes.

Salmon is extremely easy to cook, either oven-baked or grilled and has a delicious rich flavor. On the other hand, the crispy potatoes are crunchy and well seasoned with herbs and condiments. Pairing this two together and adding a spring salad, will elevate your dinner to light and healthy dish!

Yield: 2 servings                                 Time: 1 h 10'

Ingredients:
  • 2 salmon fillets
  • 4 medium potatoes, peeled
  • 4 tbsp olive oil
  • 1 teaspoon rosemary
  • 1 teaspoon cumin
  • 1 teaspoon Herbes de Provence
  • 2 tbsp of bread crumbs
  • 1/2 head of green leaf lettuce, torn into bite-size pieces
  • 2 tomatoes, sliced
  • 1 teaspoon of red whine vinegar 
  • salt 
  • pepper

Directions:
  1. Preheat the oven on 205°C (400°F).
  2. Cut the potatoes lengthwise, in equal wedges.
  3. Place the potatoes in an oven-proof glass bakeware and add the 3 tbsp olive oil, rosemary, cumin, salt, pepper, Herbes de Provence and bread crumbs. Mix well until all the wedges are coated.
  4. Bake for 50-60 min, until they are soft and golden-brown.
  5. Meanwhile, season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet, drizzle with a little olive oil and set aside.
  6. For the salad preparation, in medium bowl add the the remaining tbsp of olive oil, red whine vinegar, salt and pepper and stir.
  7. Add the lettuce and tomatoes and toss to combine.
  8. Remove the potatoes from the oven. 
  9. Place the salmon in the oven and bake it for 15 min.
  10. Place the crispy potatoes and the salmon on a plate and serve immediately with the salad.

Tips and tricks:
  • For extra crunch on your potatoes, replace the bread crumbs with cornflour.
  • Always add olive oil or butter to salmon before baking it, so the result is moist and succulent.
