Mushroom-bell pepper pasta - A simple and healthy vegan dish

Mushrooms are an excellent source of protein. They are high in fiber and also rich in B vitamins which help maintain a healthy metabolism. Just like meat, they are savory and this makes them a favorite ingredient in vegetarian recipes.
On the other hand, bell-peppers is not only an excellent source of carotenoids, but also an important source of vitamins and antioxidants.

This dish is a great choice for an easy light lunch or dinner and it's ready in less than 20 minutes.  It will be a great addition in your cooking repertoire!

Yield: 2 servings                         Time: 15 minutes

Ingredients:
  • 110 g spaghetti (4 oz)
  • 2 handfulls of mushrooms
  • 1 bell-pepper
  • 2 gloves of garlic 
  • 3 tbsp extra-virgin olive oil
  • salt 
  • pepper 
Directions:
  1. Using a damp paper towel or a soft mushroom brush, wipe each mushroom, one at a time, to remove any dirt. With a sharp knife, on a cutting surface, trim thin slices from the ends of the stems.
  2. Using a knife, remove the stalk of the pepper, then cut in half. Remove the seeds and pith inside. Then, slice off thin strips lengthwise.
  3. Cook pasta according to package directions.
  4. Add the olive oil to a pan on medium to high heat.
  5. When the oil is hot, add the chopped garlic and cook until the oil becomes flagrant.
  6. Add the mushrooms and bell-pepper and sauteed them until soft, for about 5 minutes.
  7. Season with salt and pepper. 
  8. Add the drained spaghetti and stir to combine.
  9. Serve immediately.

Tips and Tricks:
  • Do not soak the mushrooms because they absorb water like little sponges so they won't brown nicely when cooked if they are full of water.
