Baby Portobello mushrooms and leeks is sauteed and rolled in the chicken breast which was then wrapped in bacon. The stuffed chicken is baked in the oven until the meat is moist and cooked through. As a side dish, I used a creamy potato puree and a fresh green salad.

I love making stuffed chicken breast because you can stuff it with almost everything that you have on hand. Cheese, spinach, prosciutto and so on are a great example of ingredients that can be used in this recipe. So, get creative and prepare a beautiful dinner using this recipe!

Yield: 2 servings                                          Time: 1 hour 10 min

Ingredients:
  • 1 chicken breasts
  • 110 g (4 oz diced) Portobello mushrooms
  • 1 handful (1 cup) of diced leek
  • 1 tbsp butter
  • 60 ml (1/4 cup) white wine
  • 80 ml (1/3 cup) heavy cream
  • 2 bacon strips
  • salt 
  • pepper
 Directions:
  1. Preheat the oven to 190°C (375°F).
  2. Using a sharp knife begin to cut into the middle of the breast, with a sweeping slicing motion. Try to keep two equal halves of the chicken breast as you continue to slice but do not cut all the way through.
  3. Place the chicken breast onto plastic wrap and batter out until double in size. Season with salt and pepper on both sides and set aside.
  4. Melt the butter in a medium pan over medium heat. Add the leeks and cook until tender, for 3 minutes. 
  5. Add the mushrooms and sauteed them until soft. Increase the heat to high and add the wine. Reduce the mixture until nearly dry.
  6. Add the heavy cream and reduce until a thick custard consistency.
  7. Season with salt and pepper to taste and let the mixture cool at room temperature for 10 minutes.
  8. Stuffed the chicken breast with the mushroom composition and roll it, then wrap the breast with 2 strips of bacon. Tie the chicken with a string to secure the filling.
  9. Bake in preheated oven until the bacon is brown and crispy, and the chicken is no longer pink, for 40 minutes.
  10. Remove from oven and allow to rest for 5 to 10 minutes before removing string and serving. 
  11. Serve the chicken with potato puree and a fresh green salad.

  • If you don't have kitchen string (or twine) on hand, use toothpicks to secure your stuffed chicken.
